  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 cup fresh blackberries, halved
  • 1/3 cup all-purpose flour, spooned and leveled
  • 1/3 cup old-fashioned rolled oats
  • 3 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and light brown sugar until smooth. Add the egg and vanilla extract; mix well.
  3. In another bowl, combine all-purpose flour, baking soda, and kosher salt. Gradually add this into the wet mixture until just combined. Gently fold in halved blackberries.
  4. For the streusel topping, mix together flour, rolled oats, brown sugar, ground cinnamon, and melted butter until crumbly.
  5. Drop tablespoonfuls of cookie dough onto the prepared baking sheet and sprinkle generously with streusel topping.
  6. Bake for 15 minutes or until golden around the edges. Let cool slightly before transferring to wire racks.
