  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn (canned or frozen)
  • 1 red bell pepper, diced
  • ½ cup diced red onion
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Diced avocado for topping
  • Greek yogurt for serving (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash sweet potatoes and pierce with a fork; place on a baking sheet lined with parchment paper. Bake for 45-60 minutes until tender.
  3. In a mixing bowl, combine black beans, corn, red bell pepper, red onion, cumin, chili powder, paprika, lime juice, salt, and pepper.
  4. Once baked, cool sweet potatoes for about 5 minutes. Slice lengthwise and fluff insides with a fork.
  5. Generously fill each potato with the prepared mixture.
