  • 2 tbsp extra-virgin olive oil
  • 2 large yellow onions, chopped
  • 4 celery ribs, finely chopped
  • 4 large carrots, peeled and finely chopped
  • 2 (28-oz) cans whole stewed or crushed tomatoes
  • 7 lbs chuck roast, fat trimmed, cut into 2-inch pieces
  • 10 garlic cloves, minced
  • 4 tsp ground allspice
  • 2 tsp ground cinnamon
  • 24 cups beef stock
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef pieces in batches until browned on all sides. Remove from pot and set aside.
  2. In the same pot, sauté onions, celery, and carrots for about 8–10 minutes until softened. Add garlic, allspice, and cinnamon; cook until fragrant.
  3. Stir in tomatoes and return seared beef to the pot. Pour in enough beef stock to cover the meat.
  4. Add thyme sprigs, bay leaves, sea salt, and pepper. Bring to a boil; then reduce heat to low and simmer covered for 2.5 to 3 hours until fork-tender.
  5. Serve hot over cooked polenta, pasta, or roasted vegetables.
