  • 1 lb ground beef
  • 3/4 cup ketchup
  • 1/4 cup honey
  • 2 medium sweet potatoes, cubed
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon vegetable oil
  • 2 tablespoons apple cider vinegar
  • Seasonings: garlic powder, onion powder, paprika, salt, and pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine ketchup, honey, brown sugar, apple cider vinegar, garlic powder, onion powder, paprika, salt, and pepper to create the honey BBQ sauce.
  3. In another bowl, mix ground beef with panko breadcrumbs, kosher salt, black pepper, minced garlic, and egg until just combined.
  4. Form the mixture into 1-inch meatballs and place them on one side of a baking sheet.
  5. On the opposite side of the baking sheet, toss cubed sweet potatoes and other veggies in vegetable oil; season with salt and pepper.
  6. Drizzle half of the honey BBQ sauce over meatballs and bake for about 25 minutes until cooked through (internal temperature should reach at least 160°F) and vegetables are tender.
  7. Serve hot drizzled with remaining sauce and garnish with fresh parsley.
