  • 1 teaspoon Paprika

  • 1 teaspoon Ground Oregano
  • 1/4 teaspoon Cinnamon
  • Salt and Pepper to taste
  • 1 medium Red Onion (thinly sliced)
  • 1/4 cup Cilantro (chopped)
  • 1 cup Fresh Pineapple (diced)
  • 1/2 cup Pineapple Juice
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 8 Corn or Flour Tortillas

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, oregano, cinnamon, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 15 minutes.
  2. Heat the Skillet: Preheat a skillet over medium-high heat.
  3. Cook the Chicken: Add marinated chicken to the skillet and cook for about 6–7 minutes on each side until fully cooked. Remove from heat and let rest.
  4. Slice the Chicken: Thinly slice the rested chicken against the grain.
  5. Warm the Tortillas: In the same skillet or another pan, warm each tortilla for about 30 seconds on each side.
  6. Assemble Your Tacos: On each tortilla, layer sliced chicken, diced pineapple, red onion slices, cilantro, and drizzle lime juice over them.
