  • 2 medium acorn squash
  • 1 tbsp olive oil
  • 1 lb Italian chicken sausage
  • 1 apple (Honeycrisp or Gala)
  • 1 small onion
  • 2 celery stalks
  • Fresh thyme leaves
  • Salt and black pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Brush each acorn squash half with olive oil and season with salt and pepper. Place cut-side down on a baking sheet.
  2. Roast the squash for about 25–30 minutes until tender.
  3. In a skillet over medium heat, cook the Italian chicken sausage until browned.
  4. Add diced onion and celery; sauté for 3–4 minutes until softened.
  5. Incorporate diced apple and thyme; cook for an additional 2–3 minutes.
  6. Once the squash is done, fill each half with the sausage-apple mixture and return to the oven for another 5–7 minutes.
  7. Serve hot directly from the squash bowls.
