  • 1/2 cup butter
  • 2 cups whole milk
  • 4 eggs (separated)
  • 1 1/2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • Pinch of cream of tartar

Instructions

  1. Preheat your oven to 325°F (165°C) and prepare an 8×8 or 9×9 inch baking dish by lining it with parchment paper.
  2. Heat the milk until lukewarm and set aside.
  3. In a mixing bowl, beat egg whites with a pinch of cream of tartar until stiff peaks form.
  4. Melt the butter and let it cool.
  5. In another bowl, whisk together egg yolks and confectioner’s sugar until pale; then add vanilla, spices, melted butter, flour, and pumpkin puree along with a quarter cup of milk.
  6. Gradually mix in the remaining milk.
  7. Carefully fold in the beaten egg whites without deflating them.
  8. Pour mixture into the prepared dish and bake for 60–65 minutes or until set.
  9. Allow to cool completely before slicing.
