  • 2 cups all-purpose flour
  • 3 tablespoons cane sugar
  • 2 tablespoons ground cinnamon
  • 1/2 cup canned pumpkin puree
  • 2 cups almond milk or dairy milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese
  • 1 tablespoon almond milk or dairy milk
  • 1 cup powdered sugar

Instructions

  1. Melt 1/2 cup unsalted butter in a small saucepan over medium-high heat until golden brown. Set aside to cool slightly.
  2. In a blender, combine 2 cups all-purpose flour, 3 tablespoons cane sugar, 2 tablespoons ground cinnamon, 1/2 cup canned pumpkin puree, 2 cups almond milk, 4 large eggs, and 1 teaspoon vanilla extract. Blend until smooth; add the browned butter and blend again until fully incorporated.
  3. Lightly coat a nonstick skillet with spray and pour batter into the center to form thin crepes. Cook on medium heat until edges set, about 1 minute per side. Repeat with remaining batter.
  4. For the filling, mix 8 ounces mascarpone cheese with 1 tablespoon almond milk and gradually add 1 cup powdered sugar until creamy.
  5. Spread the filling on each crepe and fold or roll them up before serving.
