  • 2 (3 oz) boxes Peach Jell-O (dry)
  • 4 eggs
  • 1 cup oil
  • 1 (16 oz) bag frozen peaches (do not thaw)
  • ½ cup salted butter (1 stick)
  • 2 cups packed brown sugar
  • ⅔ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the yellow cake mix, dry peach Jell-O, eggs, and oil until smooth. Gently fold in frozen peaches.
  3. Pour the batter into a greased 9×13-inch baking pan and bake for 35–40 minutes, or until a toothpick comes out clean.
  4. While the cake cools, prepare the frosting: melt butter with brown sugar in a saucepan over medium heat for 2–3 minutes. Gradually whisk in heavy cream and bring to a boil. Remove from heat, stir in vanilla extract, then cool in an ice water bath while beating until thickened.
  5. Once cooled, spread frosting over the cake and slice to serve.
