  • 1 lb Ground Beef (or ground turkey/chicken)
  • 3 medium Potatoes (peeled and diced)
  • 1 medium Onion (chopped)
  • 1 bell pepper (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 cup Beef Broth (or chicken broth)
  • 1 cup Cheddar Cheese (shredded)
  • 1 tbsp Olive Oil (for cooking)
  • Fresh Parsley (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook for about 8-10 minutes until softened. Remove from skillet and set aside.
  2. In the same skillet, add ground beef (or turkey/chicken) and cook until browned, breaking it apart with a spatula. Drain excess fat if needed.
  3. Stir in chopped onion, bell pepper, minced garlic, paprika, onion powder, garlic powder, salt, and pepper. Cook for an additional 3-4 minutes until vegetables soften.
  4. Return cooked potatoes to the skillet, pour in broth, and stir to combine. Cover and simmer for about 5 minutes until potatoes are tender.
  5. Sprinkle shredded cheese over the top, cover again, and let melt for 2-3 minutes until bubbly.
