  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 8 oz mushrooms (cremini or white), sliced
  • ¾ cup pearl barley
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery for about 5 minutes until softened.
  2. Add mushrooms and cook until they are lightly browned.
  3. Stir in pearl barley along with vegetable broth. Add thyme, bay leaf, salt, and pepper; mix well.
  4. Bring to a boil then reduce heat to low and let it simmer uncovered for 40–45 minutes until the barley is tender.
  5. Discard the bay leaf and adjust seasoning as needed.
  6. Serve hot in bowls garnished with fresh parsley.
