  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/2 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • 3/4 cup pumpkin puree
  • 1/2 cup milk
  • 1/2 cup granulated sugar for coating
  • 2 teaspoons ground cinnamon for coating
  • 1/4 cup unsalted butter for coating

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a mini muffin pan.
  2. In one bowl, whisk together whole wheat flour, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. In another bowl, mix melted butter with brown sugar until combined. Add egg, vanilla extract, pumpkin puree, and milk; whisk until smooth.
  4. Combine the wet and dry mixtures gently to avoid overmixing.
  5. Spoon the batter into the prepared muffin pan until two-thirds full.
  6. Bake for 12-14 minutes or until a toothpick inserted comes out clean.
