  • 3 cloves Garlic (minced)
  • 1 teaspoon Crushed Red Pepper Flakes (adjust according to spice preference)
  • 2 tablespoons Tomato Paste (can substitute with canned crushed tomatoes)
  • 28 ounces Canned Whole Peeled Tomatoes (diced tomatoes can substitute if needed)
  • 4 cups Broth (Vegetable or chicken broth)
  • 1 cup Heavy Cream (or coconut cream as an alternative)
  • 1 cup Fresh Basil Leaves (torn, or use 1 tsp dried)
  • Kosher Salt (to taste)
  • Freshly Cracked Black Pepper (to taste)
  • 2 tablespoons Softened Butter (for grilling)
  • 4 slices Sourdough Bread (can use whole grain or gluten-free)
  • 1 cup Shredded Sharp Cheddar Cheese (substitute with mozzarella or plant-based cheese if preferred)

Instructions

  1. In a heavy-bottomed pot over medium heat, melt the unsalted butter. Sauté diced onion until translucent, then add minced garlic and crushed red pepper flakes.
  2. Stir in tomato paste, followed by whole peeled tomatoes. Break them up as they cook.
  3. Pour in the broth and simmer for 20 minutes while stirring occasionally.
  4. Blend the mixture until smooth using an immersion blender or countertop blender.
  5. Return to heat and stir in heavy cream or coconut cream, along with torn basil leaves and seasonings to taste.
  6. For croutons, spread butter on one side of sourdough slices, grill until golden brown with cheese in between, then cut into crouton-sized pieces.
  7. Serve bisque topped with grilled cheese croutons and enjoy!
