  • 3 cups apple juice
  • ½ cup orange juice
  • 1 tsp cinnamon

  • 1 cup mashed sweet potato
  • 1 ½ cups rolled oats
  • ½ cup almond flour or regular flour
  • ⅓ cup maple syrup or honey
  • 1 egg
  • 2 tbsp melted coconut oil or butter
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ⅓ cup chopped pecans or walnuts
  • ⅓ cup raisins or dried cranberries

Instructions

  1. Blend together pumpkin puree, apple juice, orange juice, cinnamon, and nutmeg until smooth.
  2. Chill the mixture in the refrigerator for at least an hour to allow flavors to meld.
  3. Preheat your oven to 175°C (350°F). Line a baking sheet with parchment paper.
  4. In a large bowl, combine mashed sweet potato, egg, maple syrup, melted coconut oil, and vanilla extract.
  5. Mix in rolled oats, almond flour, cinnamon, nutmeg, baking soda, and salt until just combined. Fold in chopped nuts and raisins if desired.
  6. Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet and bake for 12–15 minutes until golden brown.
