- 12 tostada shells
- 1 ½ lb raw peeled shrimp
- 2 avocados (mashed)
- 3–4 tomatoes (seeded and diced)
- 1 jalapeño pepper (minced)
- juice from 1 lime
- 1 small bunch cilantro (minced)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/4 tsp black pepper
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp minced garlic
- In a bowl, mix chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil. Toss shrimp until coated and set aside.
- In another bowl, mash avocados and mix in minced cilantro, garlic, lime juice, salt, and pepper until smooth.
- Combine diced tomatoes, minced garlic, jalapeño pepper, red onion, and cilantro in a separate bowl for pico de gallo.
- Preheat grill pan over medium heat with cooking spray. Grill shrimp for 1-2 minutes on each side until opaque.
- Assemble by topping tostada shells with guacamole, grilled shrimp, and pico de gallo.
