  • 12 tostada shells
  • 1 ½ lb raw peeled shrimp
  • 2 avocados (mashed)
  • 34 tomatoes (seeded and diced)
  • 1 jalapeño pepper (minced)
  • juice from 1 lime
  • 1 small bunch cilantro (minced)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp minced garlic

Instructions

  1. In a bowl, mix chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil. Toss shrimp until coated and set aside.
  2. In another bowl, mash avocados and mix in minced cilantro, garlic, lime juice, salt, and pepper until smooth.
  3. Combine diced tomatoes, minced garlic, jalapeño pepper, red onion, and cilantro in a separate bowl for pico de gallo.
  4. Preheat grill pan over medium heat with cooking spray. Grill shrimp for 1-2 minutes on each side until opaque.
  5. Assemble by topping tostada shells with guacamole, grilled shrimp, and pico de gallo.
