  • 8 oz elbow macaroni (uncooked)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 6 slices mozzarella cheese (cut into ghost shapes)
  • Black sesame seeds or peppercorns (for eyes)
  • Olive oil or butter (for greasing)

Instructions

  1. Cook the elbow macaroni in salted water until just tender. Drain and set aside.
  2. In a saucepan, melt butter over medium heat. Whisk in flour for about one minute to create a roux.
  3. Gradually add the milk while whisking constantly. Cook for 3–4 minutes until thickened.
  4. Remove from heat, stir in the cheddar and Parmesan until melted, and season with salt and pepper.
  5. Combine the cooked pasta with the cheese sauce until well coated.
  6. Preheat your oven to 375°F (190°C). Grease a baking dish, spread the mac & cheese evenly, and top with mozzarella ghosts.
  7. Add black sesame seeds or peppercorns for spooky eyes.
  8. Bake uncovered for 20–25 minutes until bubbly and golden brown.
