  • 2 1/2 cups flour
  • 2 tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 230 g butter
  • 8 tbsp ice water
  • 1 cup pumpkin puree
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp ginger
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup sweetened condensed milk
  • 2 tsp cinnamon
  • 1/3 cup granulated sugar

Instructions

  1. In a food processor, blend flour, sugar, and salt until combined. Add cold butter and mix until crumbly.
  2. Gradually add ice water until the dough holds together. Wrap and chill for at least one hour.
  3. In a bowl, whisk together pumpkin puree, egg, sweetened condensed milk, and spices until smooth.
  4. Roll out chilled dough on a floured surface; cut into circles using a cookie cutter.
  5. Place about one tablespoon of filling on half of the circles; top with another circle and seal edges using a fork.
  6. Make slits on top for steam release; brush with an egg wash and sprinkle with cinnamon sugar.
  7. Bake at 200°C (400°F) for 15-20 minutes or until golden brown.
