  • 1 teaspoon chili powder

  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 can (14 oz) black beans (drained and rinsed)
  • 1 cup frozen or canned corn
  • 4 cups low-sodium chicken broth
  • 2 cups shredded rotisserie chicken
  • Salt and pepper to taste
  • Juice of 1 lime
  • Crispy tortilla strips or crushed tortilla chips
  • Shredded cheese
  • Sliced avocado
  • Fresh cilantro
  • Jalapeño slices
  • Sour cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3–4 minutes. Stir in minced garlic, cumin, chili powder, and smoked paprika; cook for another minute.
  2. Add diced tomatoes with green chilies and fire-roasted tomatoes; stir well. Then add black beans, corn, and chicken broth. Bring to a boil.
  3. Reduce heat to low and stir in shredded rotisserie chicken; let simmer for about 10 minutes.
  4. Taste the soup and adjust seasoning with salt, pepper, and lime juice as needed. Serve hot with desired toppings.
