  • 1 ½ cups rolled oats

  • ¼ tsp baking soda

  • ⅓ cup maple syrup
  • 1 egg
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • ⅓ cup chopped pecans or walnuts (optional)
  • ⅓ cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, combine mashed sweet potato, egg, maple syrup, melted coconut oil, and vanilla extract.
  3. In another bowl, whisk together rolled oats, almond flour, cinnamon, nutmeg, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Fold in chopped nuts and dried fruits if desired.
  6. Scoop about 2 tablespoons of dough per cookie onto a parchment-lined baking sheet and slightly flatten each scoop.
  7. Bake for 12-15 minutes until golden brown on the bottom.
  8. Allow cookies to cool completely on the baking sheet before serving.
