  • ½ cup brown sugar, packed

  • 2 tsp vanilla extract
  • For the Filling: ½ cup brown sugar, packed; 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, baking powder, salt, and ground cinnamon.
  3. In another bowl, cream together the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and vanilla extract until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. For the filling, mix brown sugar with ground cinnamon in a small bowl.
  7. Spread half of the dough onto parchment paper, sprinkle with filling mixture, and roll tightly into a log.
  8. Slice into rounds and place on a lined baking sheet.
  9. Bake for about 10-12 minutes or until golden brown.
