  • 2 ½ lbs chicken wings
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 cup apple cider
  • 2 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 2 apples, thinly sliced
  • 1 small fennel bulb or 1 celery stalk, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: chopped parsley or arugula for greens

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken wings with salt, pepper, and olive oil. Arrange on a baking sheet in a single layer.
  2. Roast for 35–40 minutes, turning halfway through for even cooking.
  3. In a saucepan, combine apple cider, apple cider vinegar, brown sugar, Dijon mustard, and minced garlic. Simmer over medium heat for 10–12 minutes until thickened.
  4. Brush the roasted wings with the glaze and return them to the oven for an additional 5 minutes.
  5. For the salad, toss together sliced apples, fennel (or celery), lemon juice, olive oil, salt, and pepper in a mixing bowl.
