  • 2 large chicken breasts (or 4 medium/small)
  • 1 Tbsp olive oil
  • 3 Tbsp butter
  • 1 Tbsp chicken base
  • 4 Tbsp all-purpose flour
  • 2 cups chicken stock
  • Instant Pot Mashed Potatoes

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat; cook chicken for about 5 minutes on each side until cooked through (165℉). Set aside.
  3. In the same skillet, melt butter and stir in chicken base. Create a roux by mixing flour with onion powder and garlic powder; add to the skillet and cook for 30 seconds.
  4. Gradually whisk in chicken stock and water; simmer until thickened.
  5. Shred the cooked chicken and return it to the gravy, simmering together briefly.
  6. Serve hot over prepared mashed potatoes.
