  • 2 large eggs (room temperature)
  • ⅓ cup applesauce (room temperature)
  • ⅓ cup milk (room temperature)
  • 6 oz cream cheese (cold, full-fat)
  • ¼ cup unsalted butter (room temperature)
  • ½ cup brown sugar (packed)
  • ½ tsp salt
  • 1 tsp vanilla extract
  • ¾ cup powdered sugar
  • ¼ tsp ground cinnamon
  • pinch of ground nutmeg
  • pinch of ground cardamom
  • pinch of ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round baking pan by greasing it.
  2. In a mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, and spices until well combined.
  3. In another bowl, mix brown sugar, granulated sugar, vegetable oil, eggs, applesauce, and milk until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. Pour the batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Once cooled, prepare the frosting by beating cream cheese and butter together; then add brown sugar, salt, vanilla extract, powdered sugar, and ground spices until smooth.
  7. Frost the cooled cake evenly before serving.
