  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 4 ounces cream cheese
  • 5 cups heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon lime juice
  • ¼ cup fresh cilantro, chopped
  • 1 tablespoon olive oil

Instructions

  1. Season chicken with salt, pepper, and Cajun seasoning. Set aside.
  2. In a Dutch oven over medium-high heat, heat olive oil and sear the chicken until golden brown (about 5-7 minutes). Shred once cooled.
  3. Sauté onion, garlic, bell pepper, and jalapeño in the same pot until soft.
  4. Add chicken broth and white beans; stir in remaining Cajun seasoning.
