  • 3 cups (375 g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120 ml) buttermilk
  • 1/2 cup (120 ml) heavy whipping cream
  • 1 cup (170 g) toffee baking bits, plus extra for garnish
  • 1 can (14 ounces/397 g) sweetened condensed milk
  • 1 cup (220 g) packed light brown sugar for frosting
  • 2 tablespoons (28 g) unsalted butter for frosting
  • 1 teaspoon vanilla extract for frosting
  • 1/2 cup (60 g) pecan cookie pieces and toffee bits for frosting

Instructions

  1. Preheat oven to 325°F (163°C) and prepare a bundt pan by greasing and lightly flouring it.
  2. In a large mixing bowl, cream together softened butter and shortening until smooth. Add both sugars and mix until light and fluffy.
  3. Incorporate eggs one at a time followed by vanilla.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with buttermilk and heavy cream.
  5. Gently fold in toffee baking bits before pouring the batter into the prepared bundt pan.
