  • 2 packages Biscoff cookies (about 64 cookies)
  • 1 cup cold coffee
  • 4 cups chilled heavy cream
  • 8 oz cold cream cheese
  • ½ cup powdered sugar
  • ⅓ cup warmed Biscoff spread
  • 1 cup semi-sweet chocolate chips
  • ¾ cup heavy cream (for ganache)
  • Biscoff cookie crumbs for garnish

Instructions

  1. Brew 1 cup of strong coffee and allow it to cool completely.
  2. In a mixing bowl, combine cold cream cheese and powdered sugar. Beat until smooth and creamy.
  3. Gradually add chilled heavy cream while mixing until soft peaks form.
  4. Gently fold in warmed Biscoff spread until well combined.
  5. Dip each Biscoff cookie into cooled coffee and layer half at the bottom of a baking dish.
  6. Spread half of the Biscoff filling over the cookies.
  7. Repeat with another layer of dipped cookies followed by the remaining filling on top.
  8. For the ganache, heat ¾ cup heavy cream until simmering, then add chocolate chips and stir until melted.
  9. Pour ganache over the top layer and refrigerate for at least four hours or overnight before serving.
